Healthy Green Rice Recipe
Green Rice is a very flavorful and colorful looking rice dish. It is very healthy and nutritious rice recipe. This is ideal for lunch or dinner and also can be packed for lunch box. Let’s follow this healthy recipe.
To Be Blended Into A Smooth Green Paste ( Without Using Any Water)
- 2 tbspchopped coriander (dhania)
- 2 tbspchopped coriander (dhania) stalks
- 2 tbspchopped mint leaves (pudina)
- 1/2 tbsproughly chopped green chilies
- 1 tspchopped ginger (adrak)
- 2garlic (lehsun) cloves
- 1/4 cupcoconut milk
- 1 1/2 cupsbasmati rice, soaked for 30 minutes and drained
- 1 tbspoil
- 3cloves (laung / lavang)
- 1cinnamon (dalchini) stick
- 1bay leaf (tej patta)
- 4black peppercorns (kalimirch)
- 10-12cashew nuts (kaju) , broken into pieces
- 1/2 cupsliced onions
- 1 1/4 cupscoconut milk
- 1/4 cupgreen peas
- saltto taste
For the green paste
- In a blender add chopped coriander, chopped coriander stalks, mint leaves, green chili, ginger, garlic, coconut milk and blend into a smooth paste and keep it aside
How to proceed
- Heat the oil in a deep non-stick pan, add the cloves, cinnamon, bay leaf, peppercorns and cashew nuts and fry on a medium flame for 1 minute.
- Add the onions and flame on a medium flame for 1 to 2 minutes.
- Add the prepared green paste and fry on a medium flame for 1 minute.
- Add the coconut milk, green peas and salt, mix it well and cook on a medium flame for 3 minutes and stir occasionally.
- Add the rice and 1¼ cups of water, mix it well and cover with a lid and cook on a medium flame for 15 minutes and stir occasionally and after the rice gets nicely cooked and switch off the flame and serve it hot.
