Prep Time: 15min Cook time: 20min Ingredients: 2 cupCooked rice,1 cupGrated coconut,1 tablespoonOil,1 teaspoonMustard seeds,½ teaspoonCumin seeds,½ tablespoonChana dal,2 teaspoonUrad dal,2Red chilies,1Green chilies,5 leavesCurry leaves,1 inchGinger,6Cashew nuts,Saltto taste, Instructions: Boil rice in such a way that the grains are separate Add one teaspoon of cooking oil to it and mix it well Spread the rice on a plate and cool it for sometime You can use either normal or basmati rice for preparing the dish Grate fresh coconut and keep it aside Place a pan on flame and add oil to it Once the oil is heat, add mustard seeds, cumin seeds and let them splutter Add chana dal, urad dal and red chilies to it When the dal changes its color to golden brown in color, add green chilies, chopped ginger, curry leaves and cashew nuts Saute them for a while Finally add grated coconut and saute it for a few minutes Add salt and mix the whole ingredients well Off the flame and add the coconut mix to fluffed rice Mix it well and serve it hot with Potato Chips or with Brinjal Masala -Neelima
